That sounds like a delicious fusion of two favorite desserts! Here’s a recipe for your Delectable Tiramisu Chia Pudding that combines creamy vanilla chia pudding with a rich, chocolatey espresso chia pudding:

Ingredients:

Vanilla Chia Pudding:

  • 1 cup unsweetened almond milk (or any milk of choice)

  • 1/2 cup chia seeds

  • 1-2 tbsp maple syrup (or sweetener of choice)

  • 1 tsp vanilla extract

Espresso Chia Pudding:

  • 1 cup unsweetened almond milk (or any milk of choice)

  • 1/2 cup chia seeds

  • 1 tbsp cocoa powder (for that rich chocolate flavor)

  • 1-2 tbsp maple syrup (or sweetener of choice)

  • 1 shot espresso (or 1 tbsp instant coffee mixed with 2 tbsp warm water)

  • 1/2 tsp vanilla extract

For Garnish:

  • Cocoa powder, shaved chocolate, or crushed biscuits (like ladyfingers or graham crackers for a Tiramisu feel)

  • Optional: Mascarpone or Greek yogurt for a creamy topping


Instructions:

  1. Prepare the Vanilla Chia Pudding:

    • In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, and vanilla extract.

    • Stir well, making sure the chia seeds are evenly distributed.

    • Cover the bowl and place it in the fridge for at least 4 hours or overnight to allow the chia pudding to set.

  2. Prepare the Espresso Chia Pudding:

    • In a separate bowl, whisk together the almond milk, chia seeds, cocoa powder, maple syrup, espresso, and vanilla extract.

    • Mix well and make sure there are no lumps of cocoa powder.

    • Cover the bowl and refrigerate for at least 4 hours or overnight.

  3. Assemble the Tiramisu Chia Pudding:

    • Once both chia puddings have set, layer them in jars or serving glasses. You can alternate between the vanilla and espresso chia puddings, creating a beautiful swirled effect.

    • You can either spoon them directly into the jar or layer them carefully using a piping bag or spoon.

  4. Garnish:

    • Once assembled, garnish with a dusting of cocoa powder or shaved chocolate on top for an extra indulgent touch.

    • For an authentic tiramisu feel, you can even add crushed ladyfingers or a dollop of mascarpone (or Greek yogurt for a lighter option).

  5. Serve:

    • Serve chilled and enjoy the creamy, coffee-chocolate, vanilla goodness!


Tips:

  • Sweetness: Adjust the sweetness of both layers according to your taste.

  • Coffee: If you’re not into espresso, you can skip it or use decaf for a gentler flavor.

  • Texture: If you prefer a smoother texture, blend the pudding base before refrigerating it.
