Pineapple Quick Bread

Pineapple Quick Bread sounds delicious! Here’s a simple recipe for you to try:

Ingredients:

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon ground cinnamon (optional)

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar (packed)

  • 1/2 cup vegetable oil or melted butter

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 can (8 oz) crushed pineapple, drained (reserve the juice)

  • 1/4 cup of the reserved pineapple juice

  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using). Set aside.

  3. In a large bowl, mix together the granulated sugar, brown sugar, and oil (or melted butter). Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Fold in the pineapple (with the juice you reserved) and mix gently.

  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. If using nuts, fold them in now.

  6. Pour the batter into the prepared loaf pan, smoothing the top.

  7. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.

  8. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
