Here’s a Lemon Blueberry Delight recipe – a refreshing, layered dessert with a tangy-sweet flavor combination that’s perfect for summer gatherings or anytime you want a fruity treat.

🧁 Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs (about 10 full sheets)

  • ¼ cup granulated sugar

  • ½ cup (1 stick) unsalted butter, melted

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 cup whipped topping (like Cool Whip)

For the Lemon Layer:

  • 1 (3.4 oz) box instant lemon pudding mix

  • 1 ½ cups cold milk

  • 1 tbsp lemon zest (optional, for extra tang)

For the Blueberry Layer:

  • 2 cups fresh or frozen blueberries

  • ¼ cup granulated sugar

  • 1 tbsp lemon juice

  • 1 tsp cornstarch mixed with 2 tsp water (for thickening)

Topping:

  • 1 ½ cups whipped topping

  • Extra blueberries and lemon zest (optional for garnish)

1. Make the Crust:

  • Preheat oven to 350°F (175°C).

  • In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.

  • Press mixture firmly into a 9×13-inch baking dish.

  • Bake for 10-12 minutes until golden. Let cool completely.

2. Prepare the Cream Cheese Layer:

  • Beat softened cream cheese, powdered sugar, and vanilla until smooth.

  • Fold in whipped topping.

  • Spread evenly over the cooled crust. Chill while preparing the next layer.

3. Prepare the Lemon Layer:

  • In a bowl, whisk lemon pudding mix and milk for 2 minutes until thickened.

  • Stir in lemon zest if using.

  • Spread over the cream cheese layer. Chill again.

4. Prepare the Blueberry Layer:

  • In a saucepan over medium heat, combine blueberries, sugar, and lemon juice.

  • Cook until berries begin to burst (about 5 minutes).

  • Stir in the cornstarch slurry and simmer until thickened (1–2 minutes).

  • Let cool completely, then spread over lemon layer.

5. Add Final Topping:

  • Spread whipped topping evenly over the blueberry layer.

  • Garnish with extra blueberries and lemon zest if desired.

6. Chill:

  • Refrigerate at least 4 hours or overnight for best results.


📝 Tips:

  • For a shortcut, use canned blueberry pie filling instead of the homemade blueberry layer.

  • For a more intense lemon flavor, substitute lemon curd for the pudding layer.
