Pan-fried cod with lemon butter sauce

Here’s a simple and delicious recipe for Pan-Fried Cod with Lemon Butter Sauce. It’s quick, light, and perfect for a weeknight meal.

Ingredients:

For the Cod:

  • 4 cod fillets (about 6 oz each)

  • Salt and pepper, to taste

  • 1/2 cup all-purpose flour (for dredging)

  • 2 tbsp olive oil (or vegetable oil)

  • 2 tbsp butter (for cooking)

For the Lemon Butter Sauce:

  • 4 tbsp unsalted butter

  • 2 cloves garlic, minced

  • 1/4 cup fresh lemon juice (about 1 lemon)

  • Zest of 1 lemon

  • 1 tbsp chopped fresh parsley (optional)

  • Salt and pepper, to taste

Instructions:

For the Cod:

  1. Prep the Cod:

    • Pat the cod fillets dry with paper towels. This helps them get a crispy crust when frying.

    • Season both sides of the fillets with salt and pepper.

  2. Dredge the Cod:

    • Lightly dredge the cod fillets in the flour, shaking off the excess.

  3. Cook the Cod:

    • Heat the olive oil and butter in a large skillet over medium-high heat.

    • Once the oil is hot (but not smoking), add the cod fillets. Cook the fillets for about 3-4 minutes on each side, until golden brown and cooked through (internal temperature should reach 145°F/63°C). Remove the fillets from the pan and set them aside.

For the Lemon Butter Sauce:

  1. Make the Sauce:

    • In the same skillet, lower the heat to medium and add the butter.

    • Once the butter is melted, add the garlic and sauté for about 1 minute, until fragrant.

    • Add the lemon juice and zest. Stir to combine, and let the sauce simmer for 2-3 minutes to thicken slightly.

    • Season with salt and pepper to taste.

  2. Finish the Dish:

    • Return the cod fillets to the skillet, spooning the lemon butter sauce over the fish.

    • Let the fillets warm through for about 1-2 minutes.

  3. Serve:

    • Garnish with chopped parsley, if desired.

    • Serve with your favorite sides like roasted vegetables, mashed potatoes, or a simple green salad.
