Here’s a fresh, flavorful, and easy Honey Lime Chicken Lettuce Cups with Crunchy Slaw recipe — perfect for lunch, dinner, or even party appetizers.


🥗 Honey Lime Chicken Lettuce Cups with Crunchy Slaw

Ingredients

For the Chicken:
  • 1 lb (450g) boneless, skinless chicken breast or thighs, diced

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 2 tbsp soy sauce (or tamari for gluten-free)

  • 1 tbsp honey

  • 1 tbsp lime juice

  • 1 tsp lime zest

  • 1/2 tsp ground cumin

  • Salt & pepper to taste

For the Crunchy Slaw:
  • 1 cup shredded red cabbage

  • 1 cup shredded green cabbage (or use a pre-mixed slaw blend)

  • 1/2 cup shredded carrots

  • 2 green onions, thinly sliced

  • 1/4 cup chopped fresh cilantro

  • 1 tbsp rice vinegar

  • 1 tbsp lime juice

  • 1 tsp honey

  • 1 tsp sesame oil

  • Salt to taste

To Assemble:
  • Butter lettuce, Boston lettuce, or romaine hearts (about 8–10 large leaves)

  • Optional toppings: chopped peanuts, sesame seeds, sliced chili, extra lime wedges


🥣 Instructions

1. Make the Slaw:

  1. In a large bowl, combine the red cabbage, green cabbage, carrots, green onions, and cilantro.

  2. In a small bowl, whisk together rice vinegar, lime juice, honey, sesame oil, and a pinch of salt.

  3. Pour dressing over slaw and toss well. Set aside or refrigerate to marinate slightly while you cook the chicken.

2. Cook the Chicken:

  1. In a bowl, whisk together soy sauce, honey, lime juice, lime zest, cumin, garlic, salt, and pepper.

  2. Heat olive oil in a skillet over medium-high heat.

  3. Add the chicken and cook until browned and cooked through, about 6–8 minutes.

  4. Pour the honey-lime mixture over the chicken, stir, and cook for 2–3 more minutes until the sauce thickens slightly and coats the chicken.

3. Assemble the Lettuce Cups:

  1. Spoon a portion of the chicken into each lettuce leaf.

  2. Top with a generous handful of the crunchy slaw.

  3. Garnish with peanuts, sesame seeds, and/or extra lime if desired.


✅ Tips:

  • Meal prep? Keep chicken, slaw, and lettuce separate until serving.

  • Want heat? Add Sriracha or chopped fresh chili to the chicken or slaw dressing.

  • Low-carb? This is naturally low-carb and gluten-free if you use tamari!
