Pepper Jelly & Cream Cheese Bites

Ingredients:

  • For the Base (crackers or bread):

    • 1 package of buttery crackers (like Ritz, Town House, or any crisp, slightly sweet cracker)

    • OR 1 small baguette, sliced into 1/4-inch slices (optional if you prefer a bread base)

  • For the Cream Cheese Layer:

    • 8 oz (1 block) cream cheese, softened

    • 1-2 tbsp of fresh herbs (optional, for added flavor—chives, parsley, or basil)

    • 1 tbsp lemon juice (optional, for a little tang)

    • Salt and pepper to taste

  • For the Pepper Jelly Layer:

    • 1/4 to 1/2 cup of your favorite pepper jelly (sweet or spicy, based on preference)

    • Note: If you prefer more heat, you can use a hot pepper jelly or add a pinch of chili flakes to regular jelly for extra spice.

  • Optional Garnishes:

    • Fresh herbs (like parsley, basil, or cilantro) for garnish

    • Crushed red pepper flakes for extra heat

    • Chopped pecans or walnuts for a crunchy contrast (optional)


Instructions:

  1. Prepare the Base:

    • If using crackers: Arrange your crackers (about 1-2 crackers per bite) on a large platter or tray.

    • If using baguette slices: Toast the slices lightly in the oven at 375°F (190°C) for about 5-7 minutes, just enough to make them crispy but not overly browned.

  2. Make the Cream Cheese Spread:

    • In a medium-sized mixing bowl, soften the cream cheese by leaving it out at room temperature for 10-15 minutes (or microwave it for 10-15 seconds).

    • Using a hand mixer or a spoon, beat the cream cheese until smooth and creamy.

    • If you like, add a tablespoon of lemon juice to the cream cheese for a bit of tanginess.

    • Season with a pinch of salt and pepper.

    • For added flavor, fold in finely chopped fresh herbs like chives or parsley. This is optional but adds a nice herby kick.

  3. Assemble the Bites:

    • Spread a thin but generous layer of the cream cheese mixture onto each cracker or baguette slice. You want enough to form a base but not so much that it overpowers the pepper jelly.

  4. Add the Pepper Jelly:

    • Gently spoon a small dollop of pepper jelly (about 1/2 to 1 tsp) on top of the cream cheese. If the jelly is too thick, you can microwave it for 10-15 seconds to loosen it up, making it easier to spread or spoon.

  5. Garnish and Serve:

    • Optionally, sprinkle with fresh herbs, crushed red pepper flakes, or chopped nuts (like pecans or walnuts) for added texture and flavor.

    • Serve immediately, or store in the fridge for up to 2 hours before serving if preparing in advance.


Tips:

  • Choosing the Jelly: Pepper jelly comes in various heat levels, from mild to very spicy. Choose one based on your preference. Sweet pepper jelly balances well with the cream cheese, but if you’re a spice lover, opt for something with more heat.

  • For a Vegan Version: Substitute the cream cheese with a vegan cream cheese alternative. Some brands offer excellent plant-based cream cheese that would work just as well.

  • Add Some Texture: For an extra layer of flavor and texture, add a slice of cucumber or even a thin slice of prosciutto under the cream cheese.

  • Make it a Dip: If you prefer a dip format, just serve the cream cheese and pepper jelly side-by-side with crackers or cut-up vegetables. Simply dip and enjoy!
