Slow cooker pot roast

A slow cooker pot roast is such a comforting and easy meal to make! Here’s a simple recipe to make a delicious pot roast:

Ingredients:

  • 3-4 lb beef chuck roast

  • 1 tbsp olive oil (for searing)

  • Salt and pepper to taste

  • 1 medium onion, chopped

  • 4 garlic cloves, minced

  • 3 large carrots, peeled and cut into chunks

  • 3 large potatoes, peeled and cut into chunks

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

Instructions:

  1. Sear the roast:

    • Heat the olive oil in a large skillet over medium-high heat.

    • Season the roast generously with salt and pepper on all sides.

    • Once the skillet is hot, sear the roast for about 3-4 minutes on each side until it’s browned.

    • Transfer the roast to the slow cooker.

  2. Add vegetables:

    • Arrange the chopped onions, carrots, and potatoes around the roast in the slow cooker.

  3. Prepare the broth:

    • In a small bowl, whisk together the beef broth, Worcestershire sauce, thyme, rosemary, and minced garlic.

    • Pour the broth mixture over the roast and vegetables in the slow cooker.

  4. Cook:

    • Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the roast is fork-tender.
