Ingredients:

  • 2 large cucumbers (thinly sliced)

  • 1/4 red onion (thinly sliced)

  • 1/4 cup white vinegar (or apple cider vinegar)

  • 2 tablespoons olive oil

  • 1 tablespoon sugar (optional for a slightly sweet taste)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 tablespoon fresh dill (chopped, or 1 tsp dried)

  • Optional: cherry tomatoes, feta cheese, or a sprinkle of chili flakes for variation

Instructions:

  1. Prepare the vegetables: Thinly slice the cucumbers and red onion. You can use a mandoline for uniform slices.

  2. Make the dressing: In a bowl, whisk together vinegar, olive oil, sugar (if using), salt, and pepper.

  3. Combine: Toss the cucumbers and onions with the dressing in a large bowl.

  4. Add herbs: Sprinkle in the dill and mix gently.

  5. Chill: Refrigerate for at least 15–30 minutes before serving to let the flavors meld.

Tips:

  • For less bite, soak the onion slices in cold water for 10 minutes before adding.

  • Use English cucumbers or Persian cucumbers for fewer seeds and better texture.
