Homemade Saltwater Taffy Rolls

Ingredients:

  • 2 cups granulated sugar

  • 2 tablespoons cornstarch

  • 1 cup light corn syrup

  • 1/2 cup water

  • 2 tablespoons salted butter

  • 1 teaspoon salt

  • 1 teaspoon vanilla extract (or your favorite flavor extract)

  • Food coloring (optional)

  • Powdered sugar (for dusting)


Instructions:

  1. Prepare your workspace:
    Lightly butter or oil a large baking sheet or marble slab to pull the taffy on. Have powdered sugar handy for dusting your hands and surface.

  2. Mix dry ingredients:
    In a large saucepan, whisk together sugar and cornstarch until well combined.

  3. Add liquids:
    Stir in corn syrup, water, butter, and salt. Place over medium heat.

  4. Cook the mixture:
    Stir constantly until sugar dissolves, then stop stirring and bring to a boil. Clip a candy thermometer to the pot, and cook until it reaches 245°F (118°C) — this is the firm ball stage.

  5. Remove from heat:
    Stir in vanilla extract and any food coloring you want.

  6. Cool slightly:
    Pour the hot mixture onto the prepared surface. Let it cool just enough to handle, but it should still be hot and pliable (about 5 minutes).

  7. Pull the taffy:
    Butter your hands lightly and begin pulling the taffy by stretching and folding it back onto itself. Keep pulling until it becomes opaque and lightens in color, about 10-15 minutes.

  8. Shape into rolls:
    Once pulled, stretch the taffy into a long rope about 1-inch thick. Use buttered scissors or a knife to cut into 2-3 inch pieces.

  9. Wrap the pieces:
    Wrap each piece in wax paper or parchment to keep it fresh and prevent sticking.

  10. Enjoy!
    Let your taffy set for a few hours before eating for the best texture.
