Chipotle Beef Bowl

Here’s a tasty Chipotle Beef Bowl recipe inspired by Chipotle’s flavors! It’s got marinated beef, rice, beans, and all the toppings that make it delicious.


Chipotle Beef Bowl Recipe

Ingredients:

For the Beef Marinade:

  • 1 lb flank steak or skirt steak, thinly sliced

  • 2 chipotle peppers in adobo sauce (from a can), chopped

  • 2 tbsp adobo sauce (from the chipotle peppers can)

  • 2 cloves garlic, minced

  • 1 tbsp lime juice (fresh)

  • 1 tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp chili powder

  • ½ tsp salt

  • ½ tsp black pepper

For the Rice:

  • 1 cup long-grain white rice or basmati rice

  • 2 cups water or chicken broth

  • Juice of 1 lime

  • 2 tbsp chopped fresh cilantro

  • Salt, to taste

For the Beans:

  • 1 can (15 oz) black beans, rinsed and drained

  • 1 tsp olive oil

  • ½ tsp cumin

  • ½ tsp garlic powder

  • Salt and pepper to taste

Toppings (optional but recommended):

  • Corn salsa or roasted corn

  • Diced tomatoes or pico de gallo

  • Shredded lettuce

  • Sour cream or Greek yogurt

  • Shredded cheese (cheddar or Mexican blend)

  • Guacamole or sliced avocado

  • Lime wedges


Instructions:

  1. Marinate the Beef:

    • In a bowl, combine the chopped chipotle peppers, adobo sauce, minced garlic, lime juice, olive oil, cumin, smoked paprika, chili powder, salt, and pepper.

    • Add the sliced steak, toss to coat well, and marinate for at least 30 minutes (or up to 4 hours in the fridge).

  2. Cook the Rice:

    • Rinse the rice under cold water until the water runs clear.

    • Combine rice and water (or broth) in a pot, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.

    • Remove from heat, fluff with a fork, and stir in lime juice, cilantro, and salt to taste.

  3. Prepare the Beans:

    • Heat olive oil in a skillet over medium heat.

    • Add black beans, cumin, garlic powder, salt, and pepper.

    • Cook, stirring occasionally, until heated through (about 5 minutes).

  4. Cook the Beef:

    • Heat a grill pan or skillet over medium-high heat.

    • Remove steak from marinade and cook for 2-3 minutes per side or until desired doneness.

    • Let the meat rest for a few minutes, then slice thinly if not already.

  5. Assemble the Bowl:

    • Start with a base of cilantro-lime rice.

    • Add black beans, then top with the cooked chipotle beef.

    • Add your favorite toppings like corn, pico de gallo, shredded lettuce, cheese, sour cream, and guacamole.

    • Serve with lime wedges.
