Crispy Honey Lime Chicken Tostada Towers with Avocado Lime Drizzle

Ingredients

For the Crispy Honey Lime Chicken:

  • 2 boneless, skinless chicken breasts, cut into strips

  • 1 cup buttermilk

  • 1 cup all-purpose flour

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

  • Vegetable oil for frying

  • 3 tbsp honey

  • Zest and juice of 1 lime

For the Tostadas:

  • 6 small corn tortillas

  • Cooking spray or oil for frying tortillas

  • 1 cup shredded lettuce or cabbage

  • 1 cup black beans, drained and rinsed

  • 1 cup corn kernels (fresh or frozen)

  • 1/2 cup diced tomatoes

  • 1/2 cup shredded cheddar or Mexican blend cheese

  • Fresh cilantro for garnish

For the Avocado Lime Drizzle:

  • 1 ripe avocado

  • Juice of 1 lime

  • 1/4 cup sour cream or Greek yogurt

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • Water to thin if needed


Instructions

1. Prepare the Crispy Chicken:

  • In a bowl, marinate the chicken strips in buttermilk for at least 30 minutes.

  • In another bowl, mix flour, chili powder, cumin, garlic powder, salt, and pepper.

  • Heat vegetable oil in a deep skillet or frying pan to 350°F (175°C).

  • Dredge each chicken strip in the flour mixture, shaking off excess, then fry until golden and cooked through, about 4-5 minutes. Drain on paper towels.

  • In a small saucepan or microwave-safe bowl, warm the honey and lime juice together, then toss the fried chicken strips in the honey lime glaze. Add lime zest on top.

2. Make the Tostada Shells:

  • Heat oil in a pan over medium-high heat or preheat oven to 375°F (190°C).

  • Fry or bake tortillas until crisp and golden, about 2-3 minutes per side in oil or 8-10 minutes in oven. Drain excess oil if fried.

3. Prepare the Avocado Lime Drizzle:

  • In a blender or food processor, combine avocado, lime juice, sour cream, garlic, salt, and pepper.

  • Blend until smooth, adding water a tablespoon at a time until desired drizzle consistency.

4. Assemble the Tostada Towers:

  • Start with one crispy tostada shell.

  • Spread a layer of shredded lettuce or cabbage.

  • Add a few honey lime chicken strips.

  • Sprinkle some black beans, corn, diced tomatoes, and cheese.

  • Drizzle some avocado lime sauce.

  • Repeat layers once or twice more to form a tower, finishing with avocado drizzle and fresh cilantro on top.


Tips:

  • Use toothpicks or skewers to hold the tostada towers together when serving.

  • Add sliced jalapeños or hot sauce for extra heat.

  • Serve with lime wedges on the side.
