✅ Ingredients:

  • 1½ lbs (680g) ground chicken

  • ¾ cup grated Parmesan cheese

  • ½ cup plain breadcrumbs (or panko)

  • ½ cup whole milk

  • 2 large eggs

  • 4 cloves garlic, minced

  • 1 small onion, finely diced or grated

  • 2 tsp Italian seasoning

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • ½ tsp red pepper flakes (optional)

  • 1½ tsp salt

  • ½ tsp black pepper

  • 2 tbsp fresh parsley, chopped (or 1 tsp dried)

  • ¼ cup mayonnaise or sour cream (secret ingredient for ultra-moist texture)

Optional Topping:

  • ¼ cup shredded mozzarella or provolone

  • 2 tbsp grated Parmesan

  • 1 tbsp olive oil or melted butter, for brushing


👩‍🍳 Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

  2. In a large bowl, combine breadcrumbs and milk. Let sit for 2–3 minutes to soak.

  3. Add ground chicken, eggs, Parmesan, garlic, onion, parsley, seasonings, and mayonnaise (or sour cream) to the breadcrumb mixture. Mix until just combined — don’t overmix to avoid a tough loaf.

  4. Shape into a loaf on your baking sheet or place into a loaf pan.

  5. (Optional) Top with shredded cheese and a sprinkle of Parmesan. Brush with olive oil or melted butter for extra richness and browning.

  6. Bake for 45–55 minutes, or until internal temperature reaches 165°F (74°C). If browning too quickly, loosely tent with foil.

  7. Rest 5–10 minutes before slicing, to lock in moisture.

  • Mashed potatoes or cauliflower mash

  • Roasted green beans or broccoli

  • Garlic bread or a light side salad

  • Fridge: Up to 4 days (airtight container)

  • Freezer: Wrap in foil + freezer bag, up to 3 months

  • Reheat: 325°F oven until warm, or microwave in slices
