🧾 Ingredients

For the Seafood Filling:

  • 1 cup cooked shrimp, finely chopped

  • 1 cup lump crab meat (real or good-quality imitation), drained

  • 1 cup ricotta cheese

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 2 tablespoons chopped fresh parsley

  • 1 teaspoon lemon zest

  • 1 garlic clove, minced

  • Salt & pepper to taste

  • Optional: pinch of crushed red pepper flakes

For the Alfredo Sauce:

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 2 cups heavy cream or half-and-half

  • ¾ cup grated Parmesan cheese

  • Salt & pepper to taste

  • Optional: pinch of nutmeg or cayenne

Other:

  • 8–10 cooked lasagna noodles (al dente)

  • ½ cup mozzarella cheese (for topping)

  • Fresh parsley or basil for garnish

  • Nonstick spray or olive oil (for greasing)


🔪 Instructions

1. Prepare the Alfredo Sauce:

  1. In a saucepan over medium heat, melt butter.

  2. Whisk in flour and cook for 1 minute.

  3. Slowly add cream, whisking constantly until smooth.

  4. Simmer for 5–6 minutes, stirring, until slightly thickened.

  5. Add Parmesan cheese, salt, pepper, and nutmeg/cayenne if using. Set aside.

2. Make the Seafood Filling:

  1. In a medium bowl, combine shrimp, crab, ricotta, mozzarella, Parmesan, parsley, lemon zest, garlic, salt, pepper, and red pepper flakes.

  2. Mix until well combined. Taste and adjust seasoning.

3. Assemble the Roll-Ups:

  1. Lay out cooked lasagna noodles on a clean surface.

  2. Spread ~2–3 tablespoons of seafood mixture evenly along each noodle.

  3. Carefully roll each noodle into a tight spiral.

  4. Pour a small amount of Alfredo sauce on the bottom of a greased 9×13″ baking dish.

  5. Place roll-ups seam-side down in the dish.

4. Bake:

  1. Pour remaining Alfredo sauce over the roll-ups.

  2. Sprinkle mozzarella cheese on top.

  3. Cover with foil and bake at 375°F (190°C) for 25 minutes.

  4. Remove foil and bake uncovered for 10–15 more minutes, until bubbly and golden.

5. Garnish & Serve:

  • Let rest 5–10 minutes before serving.

  • Garnish with fresh herbs, lemon wedges, or extra Parmesan if desired.

  • Add chopped spinach or sautéed mushrooms for extra depth.

  • Use jumbo shrimp for a meatier texture.

  • For a spicy twist, drizzle with a touch of hot sauce or Cajun seasoning.
