🧀 Crispy Mozzarella Bites — Cheese Pulls Just Got Better

🧂 Ingredients:

  • 16 oz (1 lb) mozzarella cheese, block or string cheese

  • 1 cup all-purpose flour

  • 3 large eggs

  • 2 tbsp milk

  • 2 cups Italian-style breadcrumbs

  • 1 cup panko breadcrumbs (for extra crunch)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika (optional, for flavor depth)

  • Salt & pepper, to taste

  • Vegetable or canola oil, for frying

Optional (for serving):

  • Warm marinara or spicy arrabbiata sauce


🔪 Instructions:

1. Prep the Cheese:

  • Cut mozzarella into ¾-inch cubes or bite-sized sticks.

  • Pat dry with paper towels (removes moisture for better crisping).

2. Set Up Dredging Station:

  • Bowl 1: Flour.

  • Bowl 2: Eggs + milk, whisked.

  • Bowl 3: Mix breadcrumbs, panko, garlic powder, onion powder, paprika, salt & pepper.

3. Double Dredge for Maximum Crunch:

  • Dip cheese cubes in flour → egg wash → breadcrumb mix.

  • Repeat egg wash + breadcrumb coating a second time for extra thick crust.

4. Freeze to Lock It In:

  • Place coated bites on a parchment-lined tray.

  • Freeze for at least 1 hour (prevents leaking cheese during frying).

5. Fry Until Golden:

  • Heat oil to 350°F (175°C) in a deep pot or fryer.

  • Fry in small batches for 30–60 seconds until golden brown.

  • Transfer to paper towels to drain.

6. Serve Hot:

  • Pair with marinara, ranch, or your favorite dipping sauce.

  • Snap that cheese pull!

  • Air Fryer? Spray with oil and air fry at 400°F (200°C) for 5–7 minutes, flipping halfway.
