Pineapple bake

Here’s a simple and delicious Pineapple Bake recipe that’s perfect as a dessert or a side dish. It’s sweet, warm, and full of flavor!

Ingredients:

  • 1 can (20 oz) crushed pineapple, drained

  • 1/2 cup granulated sugar

  • 1/2 cup all-purpose flour

  • 1/2 cup shredded coconut (optional)

  • 1/2 teaspoon vanilla extract

  • 2 large eggs

  • 1/4 cup butter (melted)

  • 1 teaspoon baking powder

  • A pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar size.

  2. Prepare the pineapple: Drain the crushed pineapple well, pressing out any excess liquid. You want the pineapple to be as dry as possible so the bake isn’t too soggy.

  3. Mix the wet ingredients: In a large mixing bowl, whisk together the eggs, melted butter, sugar, and vanilla extract.

  4. Add the dry ingredients: Stir in the flour, baking powder, salt, and shredded coconut (if using). Mix well until combined.

  5. Combine with pineapple: Add the drained pineapple to the mixture and stir until evenly incorporated.

  6. Bake: Pour the mixture into the prepared baking dish and spread it out evenly. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

  7. Cool & Serve: Let it cool for a few minutes before slicing. It can be served warm or at room temperature. You can top it with whipped cream or ice cream if you like.

Tips:

  • You can add a dash of cinnamon or nutmeg for extra warmth.

  • If you prefer a thicker crust, double the amount of flour and sugar.
