Cheesy Vegetable Fritters

🧀 Cheesy Vegetable Fritters

Ingredients (Makes about 10 fritters)

  • 1 cup grated zucchini (squeeze out excess water)

  • 1 cup grated carrot

  • ½ cup corn kernels (fresh or frozen)

  • ¼ cup chopped green onions (or regular onion, finely diced)

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • 2 eggs

  • ½ cup all-purpose flour (or chickpea flour for a gluten-free version)

  • ¼ tsp baking powder (optional, for extra fluffiness)

  • Salt and pepper to taste

  • ½ tsp garlic powder (optional)

  • ½ tsp paprika or chili flakes (optional, for a bit of heat)

  • Olive oil or vegetable oil for frying


🔧 Instructions

  1. Prep the veggies:

    • Grate zucchini and squeeze out the moisture using a clean towel or paper towel.

    • Grate carrot and combine with zucchini in a large bowl.

  2. Mix ingredients:

    • Add corn, green onions, cheese, eggs, flour, baking powder (if using), and seasonings.

    • Stir until everything is well combined. The mixture should be thick but scoopable. If too wet, add a bit more flour.

  3. Fry the fritters:

    • Heat oil in a large non-stick skillet over medium heat.

    • Scoop heaped tablespoons of mixture into the pan, flattening them slightly with the back of the spoon.

    • Cook for 3–4 minutes per side, or until golden brown and cooked through.

  4. Drain and serve:

    • Remove fritters and place on paper towels to drain excess oil.

    • Serve hot with sour cream, yogurt dip, ketchup, or your favorite sauce.
