Ingredients
For the Cake:

1 ½ cups (180g) all-purpose flour

½ cup buttermilk or Greek yogurt
For the Mascarpone Filling:

8 oz (225g) mascarpone cheese, room temperature

1 cup (240 ml) heavy cream, cold

½ cup powdered sugar

1 tsp vanilla extract
-
1–2 tbsp Limoncello (optional)
For the Limoncello Syrup:

¼ cup Limoncello
-
2 tbsp water
-
2 tbsp sugar

Instructions
1. Bake the Cake:

Preheat oven to 350°F (175°C). Grease and flour two 8-inch (or 9-inch) round cake pans.

In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

In a large bowl, cream butter and sugar until light and fluffy (about 2–3 minutes).

Add eggs one at a time, beating well after each. Stir in vanilla and lemon zest.
