Air Fryer Zucchini with Parmesan

Here’s a simple and delicious Air Fryer Zucchini with Parmesan recipe that you can whip up in no time:

Ingredients:

  • 2 medium zucchinis

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup panko breadcrumbs (optional for extra crunch)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon dried oregano (or Italian seasoning)

  • Salt and pepper, to taste

  • 1 large egg

  • 1 tablespoon olive oil (for drizzling or spritzing)

Instructions:

  1. Prep the Zucchini:

    • Wash and trim the ends off the zucchinis.

    • Slice them into rounds (about 1/4-inch thick) or cut them into sticks if you prefer.

  2. Prepare the Coating:

    • In a shallow bowl, mix the grated Parmesan, panko breadcrumbs (if using), garlic powder, onion powder, oregano, salt, and pepper.

  3. Egg Wash:

    • In another bowl, beat the egg.

  4. Coat the Zucchini:

    • Dip each zucchini slice into the egg, then coat it with the Parmesan breadcrumb mixture. Press gently to make sure it sticks.

  5. Preheat the Air Fryer:

    • Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

  6. Air Fry the Zucchini:

    • Lightly coat the air fryer basket with a spray of olive oil (you can also drizzle some on the zucchini slices directly).

    • Arrange the zucchini in a single layer in the air fryer basket, leaving a little space between each piece to ensure even cooking.

    • Air fry for 8-10 minutes, flipping halfway through, until the zucchini is golden brown and crispy.

  7. Serve:

    • Once done, serve immediately with a sprinkle of fresh parsley or a side of marinara sauce for dipping, if you like.

Tips:

  • You can add a squeeze of lemon juice over the zucchini after cooking for a fresh, tangy kick.

  • For extra flavor, consider adding a pinch of red pepper flakes or a drizzle of balsamic glaze.
