Ground Turkey and Sweet Potato Skillet Delight

Here’s a simple, flavorful recipe for a Ground Turkey and Sweet Potato Skillet Delight! It’s healthy, satisfying, and super easy to make.

Ingredients:

  • 1 lb ground turkey

  • 2 medium sweet potatoes, peeled and diced

  • 1 red bell pepper, chopped

  • 1 small yellow onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1/2 tsp chili powder (optional for some heat)

  • Salt and pepper, to taste

  • 2 tbsp olive oil (or your preferred cooking oil)

  • 1/2 cup chicken broth (or water)

  • 1/4 cup fresh cilantro, chopped (optional for garnish)

  • 1/2 lime, cut into wedges (optional for serving)

Instructions:

  1. Cook the sweet potatoes:

    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.

    • Add the diced sweet potatoes and cook, stirring occasionally, for about 8-10 minutes until they are starting to soften. (You can cover the skillet to speed up cooking and prevent them from drying out.)

    • Once they’re nearly done, remove them from the skillet and set aside.

  2. Cook the ground turkey:

    • In the same skillet, add another tablespoon of olive oil.

    • Add the ground turkey and cook over medium heat, breaking it up with a spoon, until browned and fully cooked through (about 5-7 minutes).

    • Season with salt, pepper, cumin, paprika, and chili powder (if using). Stir to combine and let the flavors meld together.

  3. Add the veggies:

    • Toss in the chopped onion, garlic, and red bell pepper. Stir well, cooking for about 3-4 minutes, until the onion is translucent and the peppers are soft.

  4. Combine everything:

    • Add the cooked sweet potatoes back to the skillet, along with the chicken broth.

    • Stir everything together and cook for another 3-5 minutes, until everything is heated through and the sweet potatoes are tender.

    • Taste and adjust seasoning if needed.

  5. Serve:

    • Garnish with fresh cilantro and a squeeze of lime juice for extra freshness.

    • Serve hot, and enjoy!

Variations:

  • Add a handful of spinach or kale for some greens.

  • If you like it spicy, toss in some jalapeños or hot sauce.

  • Top with a fried egg for extra protein and richness.
