TACO SPAGHETTI

Here’s a quick and tasty recipe for Taco Spaghetti:

Ingredients:

  • 1 lb ground beef (or turkey for a lighter option)

  • 1 packet taco seasoning (or homemade seasoning)

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 1 can (4 oz) diced green chilies (optional for extra heat)

  • 8 oz spaghetti (or any pasta you prefer)

  • 1 cup shredded cheddar cheese (or a blend of cheddar and Mexican cheese)

  • 1/2 cup sour cream (optional, for creaminess)

  • 1/2 cup diced onion

  • 1/2 cup bell pepper, diced (optional)

  • 2 cloves garlic, minced

  • Salt & pepper to taste

  • Toppings: chopped cilantro, sliced olives, jalapeños, and more shredded cheese (optional)

Instructions:

  1. Cook the pasta: Cook your spaghetti (or any pasta you prefer) according to the package instructions. Drain and set aside.

  2. Cook the meat: In a large skillet, heat a little oil over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned (about 5-7 minutes).

  3. Add the veggies: Add the diced onion, bell pepper, and garlic to the skillet and sauté for 3-4 minutes until softened.

  4. Season: Stir in the taco seasoning (and salt/pepper to taste) and cook for 1-2 minutes. If it seems too dry, add a splash of water or beef broth.

  5. Add tomatoes and chilies: Stir in the diced tomatoes (with their juices) and green chilies (if using). Simmer for about 5 minutes, allowing the flavors to meld together.

  6. Combine with pasta: Add the cooked spaghetti to the skillet and toss it all together so the pasta is coated with the sauce.

  7. Add cheese: Sprinkle shredded cheddar (or cheese blend) on top of the pasta and let it melt into the sauce, creating a cheesy layer.

  8. Finish: Stir in sour cream if you like it creamy. Adjust seasoning with salt and pepper to taste.

  9. Serve: Serve the taco spaghetti hot, garnished with your favorite toppings, such as chopped cilantro, jalapeños, more cheese, and sliced olives.

Optional Variations:

  • Add beans: You can stir in black beans or kidney beans for extra protein.

  • Make it spicy: Add hot sauce or more diced jalapeños for heat.

  • Vegetarian version: Use ground plant-based meat or extra veggies (like zucchini or mushrooms) instead of beef.
