Mexican Street Corn White Chicken Chili

Here’s a Mexican Street Corn White Chicken Chili recipe that blends creamy white chicken chili with the bold, tangy flavors of Mexican street corn (elote). It’s rich, comforting, and packed with flavor.

🌽 Mexican Street Corn White Chicken Chili

📝 Ingredients:
For the Chili:
1 tbsp olive oil

1 medium onion, diced

3 garlic cloves, minced

1 ½ lbs cooked chicken (shredded; rotisserie chicken works great)

1 (4 oz) can diced green chiles

2 (15 oz) cans white beans (Great Northern or cannellini), drained and rinsed

2 cups frozen or fresh corn kernels (fire-roasted preferred)

1 tsp cumin

1 tsp chili powder

½ tsp smoked paprika

½ tsp oregano

Salt & pepper to taste

3 cups chicken broth

4 oz cream cheese, softened and cubed

½ cup sour cream

½ cup heavy cream (optional, for richness)

Juice of 1 lime

½ cup fresh cilantro, chopped

For the Street Corn Topping:
1 cup corn (charred or roasted if possible)

¼ cup crumbled cotija or feta cheese

¼ cup mayonnaise or Mexican crema

½ tsp chili powder

1 tbsp lime juice

Chopped cilantro (for garnish)

Tajín or smoked paprika (optional)

🍲 Instructions:
1. Sauté the Base:
In a large pot or Dutch oven, heat olive oil over medium heat.

Add diced onion and cook 3–4 minutes until translucent.

Add garlic and sauté another 30 seconds until fragrant.

2. Build the Chili:
Add green chiles, corn, shredded chicken, white beans, cumin, chili powder, smoked paprika, oregano, salt, and pepper.

Stir in chicken broth and bring to a simmer.

Let simmer for 15–20 minutes, stirring occasionally.

3. Make It Creamy:
Lower the heat. Stir in cream cheese until melted and smooth.

Add sour cream and heavy cream (if using), and mix well.

Stir in lime juice and chopped cilantro.

4. Prepare Street Corn Topping:
In a bowl, mix roasted corn, mayo/crema, cotija cheese, chili powder, and lime juice.

Set aside.

5. Serve:
Ladle chili into bowls.

Top each bowl with a spoonful of the street corn mixture.

Garnish with more cotija, cilantro, lime wedges, and a sprinkle of Tajín or paprika if desired.

🔁 Optional Add-ins:
Diced jalapeños for heat

Crushed tortilla chips for crunch

Avocado slices for creaminess
