🍛 Best Beef and Broccoli Recipe

Ingredients

For the Beef:

  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain

  • 1 tsp baking soda (for tenderizing)

  • 2 tsp cornstarch

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp sesame oil

  • 1 tbsp Shaoxing wine (or dry sherry)

For the Sauce:

  • 3 tbsp oyster sauce

  • 2 tbsp low-sodium soy sauce

  • 1 tbsp dark soy sauce (optional for color)

  • 1 tbsp brown sugar

  • 1 tbsp cornstarch

  • 1/2 cup beef broth or water

  • 1 tsp sesame oil

  • 1 tsp rice vinegar (optional for balance)

Other:

  • 3 cups broccoli florets

  • 2–3 tbsp neutral oil (e.g., canola, vegetable)

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, minced (optional)

  • Steamed white rice for serving

Instructions

1. Marinate the Beef

  • In a bowl, combine beef with baking soda, soy sauce, oyster sauce, cornstarch, sesame oil, and Shaoxing wine.

  • Let marinate for 15–30 minutes (refrigerated).

2. Prepare the Sauce

  • In a bowl, whisk together all sauce ingredients until smooth. Set aside.

3. Blanch the Broccoli

  • Bring a pot of water to boil. Add broccoli florets and cook for 1–2 minutes until vibrant green and just tender.

  • Drain and run under cold water to stop cooking. Set aside.

4. Cook the Beef

  • Heat 1–2 tbsp oil in a wok or large skillet over high heat.

  • Add beef (in batches if necessary) and sear for 1–2 minutes per side until browned but not overcooked. Remove and set aside.

5. Stir-Fry Everything

  • In the same pan, add a bit more oil if needed. Sauté garlic and ginger until fragrant (30 seconds).

  • Add broccoli and stir for another 30 seconds.

  • Return beef to the pan, pour in the sauce, and toss everything together.

  • Cook for 1–2 minutes, until sauce thickens and everything is heated through.
