Bacon Onion Tomato Pie

Here’s a delicious Bacon Onion Tomato Pie recipe for you! It’s savory, comforting, and perfect for brunch or a light dinner.


Bacon Onion Tomato Pie

Ingredients:

  • 1 pre-made pie crust (or homemade if you prefer)

  • 6 slices of bacon, chopped

  • 1 large onion, thinly sliced

  • 2 large tomatoes, sliced

  • 1 cup shredded cheddar cheese (or your favorite cheese)

  • 3 large eggs

  • 1 cup heavy cream (or half-and-half)

  • 1 tsp dried thyme (optional)

  • Salt and pepper to taste

  • 1 tbsp olive oil or butter (for sautéing)


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Prepare the crust:
    Place the pie crust into a 9-inch pie dish. Prick the bottom a few times with a fork to prevent bubbling.

  3. Cook the bacon:
    In a skillet over medium heat, cook the chopped bacon until crispy. Remove bacon and set aside, leaving some bacon fat in the pan.

  4. Sauté the onions:
    Add olive oil or butter if needed, then sauté the sliced onions in the bacon fat until soft and caramelized (about 8-10 minutes).

  5. Layer the pie:

    • Spread cooked bacon evenly over the pie crust.

    • Add the sautéed onions on top of the bacon.

    • Arrange tomato slices on top of the onions.

    • Sprinkle shredded cheese evenly over the tomatoes.

  6. Make the custard:
    In a bowl, whisk together eggs, heavy cream, thyme, salt, and pepper.

  7. Pour custard over the pie:
    Carefully pour the egg mixture over the layered ingredients in the pie crust.

  8. Bake:
    Bake for 35-40 minutes or until the custard is set and the top is golden.

  9. Cool and serve:
    Let the pie cool for 5-10 minutes before slicing.


Tips:

  • You can add fresh basil or oregano for extra flavor.

  • Use ripe tomatoes for the best taste and less watery filling.

  • Serve with a green salad or crusty bread.
