Here’s a tasty and easy Cheesy Taco Potatoes recipe for you — perfect as a hearty side or even a main dish!


Cheesy Taco Potatoes

Ingredients:

  • 4 large potatoes (Russet or Yukon Gold work great)

  • 1 cup shredded cheddar cheese (or Mexican blend)

  • 1 cup cooked ground beef or turkey (optional)

  • 1 packet taco seasoning

  • 2 tablespoons olive oil

  • 1/2 cup diced onions

  • 1/2 cup diced bell peppers (optional)

  • 1/2 cup sour cream

  • 1/4 cup sliced jalapeños (optional)

  • 1/4 cup chopped green onions or cilantro

  • Salt and pepper to taste


Instructions:

  1. Prep the potatoes:
    Wash and dice the potatoes into bite-sized cubes. Toss them with olive oil, salt, and pepper.

  2. Cook the potatoes:
    In a large skillet over medium heat, cook the potatoes until crispy and tender (about 15-20 minutes), stirring occasionally.

  3. Cook the beef (if using):
    While potatoes cook, brown the ground beef in another pan. Drain excess fat. Add the taco seasoning and a splash of water, then simmer until thickened.

  4. Add veggies:
    Add diced onions and bell peppers to the potatoes about halfway through cooking, letting them soften.

  5. Combine:
    Once potatoes are tender, stir in the seasoned meat (if using) and half the cheese. Mix well so cheese melts.

  6. Top and melt cheese:
    Sprinkle the remaining cheese on top. Cover the skillet for a few minutes until cheese melts.

  7. Serve:
    Garnish with sour cream, jalapeños, and chopped green onions or cilantro.
