Cheesy Taco Potatoes
Ingredients:

4 large potatoes (Russet or Yukon Gold work great)

1 cup shredded cheddar cheese (or Mexican blend)

1 cup cooked ground beef or turkey (optional)

1 packet taco seasoning

2 tablespoons olive oil

1/2 cup diced onions

1/2 cup diced bell peppers (optional)

1/2 cup sour cream

1/4 cup sliced jalapeños (optional)

1/4 cup chopped green onions or cilantro

Instructions:

Prep the potatoes:
Wash and dice the potatoes into bite-sized cubes. Toss them with olive oil, salt, and pepper. -
Cook the potatoes:
In a large skillet over medium heat, cook the potatoes until crispy and tender (about 15-20 minutes), stirring occasionally. -
