Brown Sugar Pineapple Wings Chicken

Ingredients:

  • 2 lbs chicken wings (drumettes and flats)

  • 1 cup pineapple juice (fresh or canned)

  • 1/2 cup brown sugar (packed)

  • 1/4 cup soy sauce

  • 1/4 cup pineapple chunks (optional)

  • 2 cloves garlic, minced

  • 1 tbsp ginger, grated or minced

  • 1 tbsp apple cider vinegar or rice vinegar

  • 1 tsp chili flakes or sriracha (optional for heat)

  • 1 tbsp cornstarch + 2 tbsp water (slurry for thickening)

  • Salt and pepper to taste

  • 2 tbsp oil (vegetable or olive oil)

  • Chopped green onions and sesame seeds for garnish


Instructions:

  1. Prep the wings:
    Pat the chicken wings dry with paper towels. Season lightly with salt and pepper.

  2. Make the marinade/sauce:
    In a bowl, mix pineapple juice, brown sugar, soy sauce, minced garlic, grated ginger, vinegar, and chili flakes (if using).

  3. Marinate (optional):
    If you have time, marinate the wings in half the sauce for 30 minutes to 1 hour in the fridge. If not, you can cook immediately.

  4. Cook the wings:
    Heat oil in a large skillet or wok over medium-high heat. Add wings and cook until golden brown and mostly cooked through, about 8-10 minutes. Turn frequently.

  5. Add sauce:
    Pour the remaining sauce into the pan with the wings. Add pineapple chunks if using. Bring to a simmer.

  6. Thicken sauce:
    Mix cornstarch and water to make a slurry. Pour into the pan, stirring constantly, until sauce thickens and coats the wings nicely.

  7. Final touches:
    Cook for another 2-3 minutes, making sure wings are fully cooked and sticky with sauce.

  8. Serve:
    Garnish with chopped green onions and sesame seeds. Serve hot with rice or your favorite side.
