Oatmeal Coconut Peanut Bars
Ingredients:

1 cup rolled oats

1/2 cup shredded coconut (unsweetened or sweetened, based on preference)

1/2 cup peanut butter (creamy or crunchy)

1/3 cup honey (or maple syrup for a vegan option)

1/4 cup chopped peanuts

1/4 cup mini chocolate chips (optional)

1/2 tsp vanilla extract

1/4 tsp salt
Optional Add-ins (choose up to 2 tbsp of any):

Chia seeds
-
Flaxseed meal
-
Raisins or dried cranberries

Sunflower seeds
Instructions:

Line a pan (8×8-inch or smaller) with parchment paper.

In a saucepan, gently heat the peanut butter and honey over low heat until smooth and combined. Stir in vanilla extract and salt.

In a large bowl, combine oats, coconut, chopped peanuts, and any optional add-ins.

Pour the warm peanut butter mixture over the dry ingredients and mix well. Let cool slightly before folding in chocolate chips (if using), so they don’t melt.

Press the mixture firmly into the lined pan. Use the back of a spoon or your hands to flatten and compact it.

Refrigerate for at least 1 hour to firm up.

Cut into bars and store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
