🧈 Ingredients

For the Brown Butter:

  • 1 cup (2 sticks) unsalted butter

For the Cobbler Dough:

  • 2 1/2 cups all-purpose flour

  • 2 tbsp granulated sugar

  • 1 tsp salt

  • 1 cup (2 sticks) cold unsalted butter, cubed

  • 6–8 tbsp ice water

For the Peach Filling:

  • 8–9 ripe peaches, peeled and sliced (about 6–7 cups)

  • 3/4 cup brown sugar (adjust to taste)

  • 1/4 cup granulated sugar

  • 1 tbsp lemon juice

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1 tsp vanilla extract

  • 2 tbsp cornstarch

  • 1/4 tsp salt

For Assembly:

  • 1 egg + 1 tbsp milk (egg wash)

  • Coarse sugar (optional, for sprinkling)

1. Brown the Butter:

  1. In a medium saucepan, melt 1 cup of butter over medium heat.

  2. Stir constantly as it foams and then begins to brown (golden specks appear and it smells nutty), about 6–8 minutes.

  3. Remove from heat and let it cool completely. It will be used both in the dough and in the peach filling.


2. Make the Dough:

  1. In a large bowl, mix flour, sugar, and salt.

  2. Cut in the cold cubed butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.

  3. Drizzle in 5 tbsp of the cooled brown butter, then mix in ice water 1 tbsp at a time just until dough comes together.

  4. Divide dough in half, flatten into disks, wrap in plastic, and refrigerate for at least 1 hour.


3. Prepare the Peach Filling:

  1. In a large bowl, toss sliced peaches with sugars, lemon juice, cinnamon, nutmeg, vanilla, cornstarch, salt, and the remaining brown butter.

  2. Let the mixture sit while you roll out the dough.


4. Assemble the Cobbler:

  1. Preheat oven to 375Β°F (190Β°C).

  2. Roll out one disk of dough to fit the bottom of a 9×13-inch baking dish. Press gently into the dish.

  3. Pour in the peach mixture.

  4. Roll out the second disk and place it on top. You can do a full crust with slits or a lattice.

  5. Brush with egg wash and sprinkle with coarse sugar if desired.


5. Bake:

  • Bake for 45–55 minutes, or until the top is golden brown and filling is bubbly.

  • Cool slightly before serving.
