1. Brown the Butter:

In a medium saucepan, melt 1 cup of butter over medium heat.

Stir constantly as it foams and then begins to brown (golden specks appear and it smells nutty), about 6β8 minutes.

Remove from heat and let it cool completely. It will be used both in the dough and in the peach filling.
2. Make the Dough:

In a large bowl, mix flour, sugar, and salt.
