Here’s a delicious and easy recipe for a Cheesy Biscuit Bake with Pepper Topping — perfect for breakfast, brunch, or a cozy side dish!


🧀 Cheesy Biscuit Bake with Pepper Topping

Ingredients:

For the Biscuit Base:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • 1 tsp garlic powder (optional)

  • 6 tbsp cold unsalted butter, cubed

  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar, let sit 5 min)

  • 1 ½ cups shredded sharp cheddar cheese

For the Pepper Topping:

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • ½ cup red onion, finely chopped (optional)

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • ½ tsp smoked paprika or Italian seasoning (optional)

Optional Extras:

  • Cooked crumbled bacon or sausage

  • Jalapeños for heat

  • A sprinkle of parmesan or mozzarella on top


Instructions:

  1. Prep the oven and pan:

    • Preheat oven to 400°F (200°C).

    • Grease a 9×9” baking dish or similar.

  2. Make the biscuit dough:

    • In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.

    • Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    • Stir in the shredded cheddar.

    • Add buttermilk and stir just until a soft dough forms (don’t overmix).

  3. Press into dish:

    • Gently press the dough into the prepared baking dish in an even layer.

  4. Prepare pepper topping:

    • In a skillet over medium heat, add olive oil, then sauté the peppers and onions until just softened (about 3–5 minutes).

    • Season with salt, pepper, and paprika/seasoning of choice.

  5. Assemble and bake:

    • Spoon the pepper mixture evenly over the biscuit dough.

    • Optional: sprinkle additional cheese or toppings if desired.

    • Bake for 25–30 minutes, until golden brown and cooked through.

  6. Cool and serve:

    • Let cool slightly before slicing. Serve warm!
