Hand-Rolled Crispy Pastries (Sweet or Savory)

🧁 Sweet Version: Nutty Honey Pastries

🥟 Savory Version: Cheese & Herb Crispy Rolls


📝 Ingredients

Dough (Basic for Both Sweet and Savory)

  • 2 cups all-purpose flour

  • 1/2 tsp salt

  • 3/4 cup warm water (add more if needed)

  • 1 tbsp olive oil

  • Cornstarch or rice flour (for dusting when rolling)


🧁 Sweet Filling (Nutty & Aromatic)

  • 1 cup finely chopped walnuts, pistachios, or almonds

  • 1/2 tsp cinnamon

  • 2 tbsp sugar

  • 1/2 tsp orange blossom water (optional)

🍯 Sweet Syrup

  • 1/2 cup honey

  • 1/4 cup water

  • 1 tsp lemon juice

  • 1/2 tsp rosewater (optional)


🧀 Savory Filling (Cheese & Herb)

  • 1 cup crumbled feta or ricotta

  • 2 tbsp chopped fresh dill or parsley

  • 1/4 tsp black pepper

  • Optional: sautéed spinach or caramelized onions


🍳 Instructions

1. Make the Dough

  1. In a large bowl, combine flour and salt.

  2. Slowly add warm water and olive oil, mixing until a soft dough forms.

  3. Knead for 8–10 minutes until smooth and elastic.

  4. Cover with a damp towel and let rest for at least 30 minutes.


2. Prepare the Filling

Sweet: Combine nuts, cinnamon, sugar, and optional blossom water.
Savory: Mix cheese, herbs, and seasoning. Add extra ingredients as desired.


3. Roll Out the Dough

  1. Divide dough into 8 small balls.

  2. On a floured or cornstarch-dusted surface, roll each ball as thin as possible (nearly transparent).

  3. Let the sheets air-dry for 3–5 minutes before filling — they’ll crisp up better.


4. Assemble the Pastries

  1. Place 1–2 tbsp of filling at one end of the pastry sheet.

  2. Roll tightly like a cigar or log, folding in edges if desired.

  3. Brush with melted butter or oil.


5. Bake Until Golden

  • Preheat oven to 375°F (190°C).

  • Arrange rolls on a parchment-lined tray.

  • Bake for 25–30 minutes or until golden brown and crisp.


6. (Optional) Add Syrup to Sweet Version

  • While baking, heat honey, water, and lemon juice until slightly thickened.

  • Pour warm syrup over hot pastries once out of the oven.


🥄 Serving Suggestions

  • Sweet: Garnish with chopped pistachios or a dusting of powdered sugar.

  • Savory: Serve with yogurt dip, spicy tomato chutney, or herbed olive oil.


💡 Tips for Success

  • Keep dough covered while working to prevent drying.

  • Use a light touch when rolling — over-handling can make them tough.

  • For extra crispiness, do a double roll: wrap once, then roll again in another dough layer.
