🍳 Instructions
1. Make the Dough

In a large bowl, combine flour and salt.

Slowly add warm water and olive oil, mixing until a soft dough forms.

Knead for 8–10 minutes until smooth and elastic.

Cover with a damp towel and let rest for at least 30 minutes.
2. Prepare the Filling
Sweet: Combine nuts, cinnamon, sugar, and optional blossom water.
Savory: Mix cheese, herbs, and seasoning. Add extra ingredients as desired.
3. Roll Out the Dough

Divide dough into 8 small balls.

On a floured or cornstarch-dusted surface, roll each ball as thin as possible (nearly transparent).

Let the sheets air-dry for 3–5 minutes before filling — they’ll crisp up better.
4. Assemble the Pastries
