Here’s a simple and delicious Strawberry Chia Seed Pudding recipe:

🍓 Strawberry Chia Seed Pudding

 

Ingredients:

 

For the chia pudding:

 

2 cups unsweetened almond milk (or milk of choice)

 

1/2 cup chia seeds

 

1–2 tbsp maple syrup or honey (adjust to taste)

 

1/2 tsp vanilla extract (optional)

 

 

For the strawberry layer:

 

1 ½ cups fresh or frozen strawberries

 

1–2 tsp maple syrup or honey (optional)

 

1 tsp lemon juice (optional, for brightness)

Instructions:

 

1. Make the chia pudding:

 

In a bowl or jar, whisk together almond milk, chia seeds, sweetener, and vanilla extract.

 

Let sit for 5–10 minutes, then whisk again to prevent clumping.

 

Cover and refrigerate for at least 4 hours or overnight until thickened.

 

 

 

2. Make the strawberry layer:

 

Blend strawberries with sweetener and lemon juice until smooth. If you prefer chunks, mash with a fork instead.

 

Chill in the fridge until ready to assemble.

 

 

 

3. Assemble:

 

In a glass or jar, layer chia pudding and strawberry purée.

 

Top with sliced strawberries, nuts, granola, or coconut flakes if desired.

Use full-fat coconut milk for a creamier version.
