Pineapple Heaven Cheesecake
Ingredients
Crust:

1 ½ cups graham cracker crumbs

⅓ cup sugar

6 tbsp unsalted butter, melted
Filling:

24 oz (3 packages) cream cheese, softened

1 cup granulated sugar

3 large eggs
-
1 tsp vanilla extract
-
1 cup crushed pineapple (drained well)

½ cup sour cream
-
2 tbsp all-purpose flour
Topping:
-
1 cup crushed pineapple (drained)
-
1 cup whipped cream or whipped topping (optional)
Instructions

Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.

Make the crust:
In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture firmly into the bottom of the springform pan. Set aside. -
Prepare the filling:
In a large bowl, beat the cream cheese until smooth. Gradually add sugar and beat until creamy. Add eggs one at a time, mixing well after each. Mix in vanilla, sour cream, and flour until just combined. -
Add pineapple:
Fold in 1 cup of well-drained crushed pineapple. -
Bake:
Pour filling over crust. Bake for about 50-60 minutes or until the center is just set (it may still jiggle slightly). Turn off oven and let cheesecake cool in oven with the door slightly open for 1 hour. -
Chill:
Remove from oven and cool completely at room temperature, then refrigerate at least 4 hours or overnight. -
Add topping:
Before serving, spread the remaining crushed pineapple over the top and optionally garnish with whipped cream.
