🍬 Salted Caramel Fudge Recipe

Ingredients:

  • 1 cup (200g) brown sugar (light or dark)

  • 14 oz (397g) can sweetened condensed milk

  • 1/2 cup (120g) unsalted butter

  • 1/4 cup (60ml) golden syrup or light corn syrup

  • 1/2 tsp sea salt (plus more for topping)

  • 1 tsp vanilla extract

  • Optional: flaky sea salt for sprinkling

Instructions:

  1. Prepare Pan:
Line an 8×8 inch (20×20 cm) pan with parchment paper, leaving an overhang for easy removal.

  2. Melt Ingredients:
In a heavy-bottomed saucepan over low heat, combine:

    • brown sugar

    • sweetened condensed milk

    • butter

    • golden syrup

    • salt

Stir constantly until everything is melted and smooth.

  3. Cook the Fudge:
Increase heat to medium-low and cook, stirring continuously, until the mixture thickens and reaches the soft ball stage (234–240°F or 112–115°C) on a candy thermometer. This may take 10–15 minutes.

  4. Add Vanilla:
Remove from heat and stir in the vanilla extract.

  5. Pour and Set:
Pour into the prepared pan and smooth the top. Sprinkle with flaky sea salt while still warm.

  6. Cool and Cut:
Let cool at room temperature for several hours or chill in the fridge until firm. Cut into squares.

Tips:

  • Use a candy thermometer for best results.

  • Store in an airtight container for up to 2 weeks.

  • For extra richness, drizzle with melted dark chocolate once set.
