Here’s a tasty recipe for Okra and Green Tomato Fritters — crispy, flavorful, and perfect as a snack or side dish!


Okra and Green Tomato Fritters

Ingredients:

  • 1 cup fresh okra, sliced thin

  • 1 cup green tomatoes, diced small

  • 1/2 cup onion, finely chopped

  • 1/2 cup all-purpose flour (plus extra if needed)

  • 1/4 cup cornmeal (optional for extra crunch)

  • 1 large egg

  • 1/2 cup milk (or buttermilk for tang)

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp smoked paprika or cayenne (optional for some kick)

  • Vegetable oil (for frying)


Instructions:

  1. Prep the veggies: Rinse and dry the okra, then slice thin. Dice the green tomatoes and finely chop the onion.

  2. Make the batter: In a large bowl, whisk the egg and milk together. Add the flour, cornmeal, baking powder, salt, pepper, and paprika. Mix until smooth. Add more flour if batter is too runny.

  3. Combine: Fold in the okra, green tomatoes, and onions, stirring gently to coat everything evenly.

  4. Heat the oil: Pour about 1/4 inch of vegetable oil into a large skillet and heat over medium heat until shimmering.

  5. Fry the fritters: Drop spoonfuls (about 2 tablespoons each) of batter into the hot oil. Flatten lightly with the back of the spoon. Cook for 3-4 minutes per side, or until golden brown and crispy.

  6. Drain and serve: Transfer fritters to a paper towel-lined plate to drain excess oil. Serve warm.


Serving suggestions:

  • Great with a dollop of sour cream, ranch, or a spicy dipping sauce.

  • Perfect alongside grilled meats or as a light vegetarian snack.
