No-Bake Peanut Butter Cheesecake Balls

Here’s a simple and delicious No-Bake Peanut Butter Cheesecake Balls recipe for you:


Ingredients:

  • 8 oz (225g) cream cheese, softened

  • 1 cup creamy peanut butter

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 2 cups crushed graham crackers or crushed digestive biscuits

  • 1 cup semi-sweet chocolate chips (for coating, optional)

  • 1 tbsp coconut oil or butter (for melting with chocolate, optional)


Instructions:

  1. Mix the filling:
    In a large bowl, beat the softened cream cheese and peanut butter together until smooth and creamy.

  2. Add sugar and vanilla:
    Add the powdered sugar and vanilla extract. Mix until fully combined.

  3. Add crushed crackers:
    Fold in the crushed graham crackers until the mixture is thick enough to roll into balls. If too sticky, chill for 10-15 minutes.

  4. Form balls:
    Using a spoon or cookie scoop, roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.

  5. Optional chocolate coating:
    If you want to coat the balls, melt the chocolate chips with coconut oil or butter in a microwave-safe bowl (30-second bursts, stirring in between). Dip each ball into the melted chocolate and place back on parchment paper.

  6. Chill:
    Refrigerate the balls for at least 1 hour to set before serving.


Tips:

  • You can substitute peanut butter with almond butter or any nut butter you like.

  • For extra texture, add chopped peanuts or mini chocolate chips inside the mixture.

  • Store in an airtight container in the fridge for up to a week.
