Here’s a simple and delicious Zucchini Garlic Bites recipe for you!


Zucchini Garlic Bites

Ingredients:

  • 2 medium zucchinis, grated

  • 3 cloves garlic, minced

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs (panko or regular)

  • 1 large egg

  • 2 tablespoons fresh parsley, chopped (optional)

  • Salt and pepper to taste

  • Olive oil (for frying or baking)

Instructions:

  1. Prepare Zucchini:
    Grate the zucchinis and place them in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This helps the bites hold together better.

  2. Mix Ingredients:
    In a large bowl, combine the grated zucchini, minced garlic, Parmesan cheese, breadcrumbs, egg, parsley (if using), salt, and pepper. Mix well until everything is evenly combined.

  3. Form Bites:
    Scoop out small spoonfuls of the mixture and shape into small patties or bite-sized balls.

  4. Cook:

    • Frying: Heat a little olive oil in a skillet over medium heat. Fry the bites for about 3-4 minutes on each side or until golden brown and cooked through.

    • Baking: Preheat oven to 400°F (200°C). Place bites on a greased or parchment-lined baking sheet. Lightly brush or spray with olive oil. Bake for about 15-20 minutes, flipping halfway, until golden and crispy.

  5. Serve:
    Serve warm as an appetizer or snack with your favorite dipping sauce—ranch, marinara, or a garlic aioli all work great!
