LEMON POPPY SEED LOAF WITH GLAZE

Here’s a delicious Lemon Poppy Seed Loaf with Glaze recipe for you! 🍋✨


Ingredients

For the Loaf:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 tbsp poppy seeds

  • 1 cup granulated sugar

  • Zest of 2 lemons

  • 2 large eggs

  • ½ cup unsalted butter, melted and cooled

  • ½ cup sour cream (or Greek yogurt)

  • 2 tbsp fresh lemon juice

  • 1 tsp vanilla extract

For the Glaze:

  • 1 cup powdered sugar

  • 2-3 tbsp fresh lemon juice (adjust for consistency)

  • Optional: a little lemon zest for garnish


Instructions

  1. Preheat oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

  2. Mix dry ingredients:
    In a medium bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.

  3. Combine sugar and lemon zest:
    In a large bowl, rub the lemon zest into the sugar using your fingers. This releases the oils and makes the flavor more intense.

  4. Mix wet ingredients:
    Add the eggs to the sugar mixture and beat until combined. Then stir in the melted butter, sour cream, lemon juice, and vanilla extract.

  5. Combine wet and dry:
    Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.

  6. Bake:
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool:
    Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack.

  8. Prepare the glaze:
    Whisk powdered sugar and lemon juice together until smooth. Add more lemon juice a little at a time to reach your desired consistency.

  9. Glaze the loaf:
    Once the loaf is completely cooled, drizzle the glaze over the top. Garnish with extra lemon zest if desired.
