Here’s a classic Snowball Cookies recipe for you! These are also called Russian Tea Cakes or Mexican Wedding Cookies—delicious little buttery, nutty, powdered sugar-coated treats.
Snowball Cookies Recipe
Ingredients:
-
1 cup (2 sticks) unsalted butter, softened
-
1/2 cup powdered sugar (plus extra for rolling)
-
1 teaspoon vanilla extract
-
2 1/4 cups all-purpose flour
-
1/4 teaspoon salt
-
3/4 cup finely chopped nuts (walnuts, pecans, or almonds work great)
Instructions:
-
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
In a large bowl, cream the softened butter and 1/2 cup powdered sugar until light and fluffy.
-
Mix in the vanilla extract.
-
In a separate bowl, whisk together the flour and salt.
-
Gradually add the flour mixture to the butter mixture, mixing until just combined.
-
Stir in the chopped nuts.
-
Roll dough into 1-inch balls and place them about 2 inches apart on the baking sheet.
-
Bake for 12-15 minutes, or until the edges are lightly golden (cookies will look slightly underbaked but firm).
-
Remove from oven and let cool for about 5 minutes.
-
While still warm, roll the cookies in powdered sugar. Let cool completely, then roll them in powdered sugar again for a nice coating.
