Baked Apples with Feta, Honey, and Cranberries

Ingredients:

  • 4 large apples (like Honeycrisp or Granny Smith)

  • ½ cup dried cranberries

  • ½ cup crumbled feta cheese

  • 3 tablespoons honey (plus extra for drizzling)

  • 1 teaspoon cinnamon (optional)

  • ¼ cup chopped walnuts or pecans (optional)

  • 1 tablespoon lemon juice

  • Butter or olive oil for greasing the baking dish


Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a baking dish with butter or olive oil.

  2. Prepare the apples:

    • Wash and core the apples, removing the seeds and a bit of the flesh to make room for the filling. Leave about ½ inch at the bottom to hold the stuffing.

    • Brush the inside of the apples with a little lemon juice to prevent browning.

  3. Make the filling:

    • In a small bowl, combine dried cranberries, crumbled feta, honey, and cinnamon (if using). If you like some crunch, add chopped nuts.

  4. Stuff the apples:

    • Spoon the filling into the hollowed apples, pressing lightly to pack it in.

  5. Bake:

    • Place the stuffed apples in the prepared baking dish.

    • Bake for about 25–30 minutes, or until apples are tender but still hold their shape.

  6. Serve:

    • Drizzle a little extra honey on top before serving for added sweetness.

    • Enjoy warm, as a unique dessert or even a sweet side dish.
