Peach Pecan Bread

Here’s a delicious Peach Pecan Bread recipe for you! It’s moist, fruity, and has a lovely crunch from the pecans.


Peach Pecan Bread

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon ground cinnamon

  • ½ cup (1 stick) unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup fresh peaches, peeled and diced (about 2 medium peaches)

  • ½ cup chopped pecans (plus extra for topping)

  • ½ cup sour cream or Greek yogurt


Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

  3. In a large bowl, beat the softened butter and sugar until light and fluffy (about 3 minutes).

  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  5. Mix in the sour cream (or Greek yogurt) until combined.

  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.

  7. Fold in the diced peaches and chopped pecans gently.

  8. Pour the batter into the prepared loaf pan. Sprinkle a few extra chopped pecans on top for a nice crunch.

  9. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.

  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
