🥘 Braised Lamb Shank with Creamy Mashed Potatoes

🦴 Ingredients – Lamb Shank

  • 2 lamb shanks

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 4 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 cup red wine (optional, or use more stock)

  • 2 cups beef or lamb stock

  • 1 sprig rosemary

  • 2 sprigs thyme

  • 1 bay leaf


🥔 Ingredients – Creamy Mashed Potatoes

  • 1.5 lbs (about 700g) potatoes (Yukon Gold or Russet)

  • 1/2 cup whole milk (warm)

  • 1/3 cup heavy cream

  • 4 tbsp unsalted butter

  • Salt and pepper to taste

  • Optional: roasted garlic or Parmesan for extra flavor


🔪 Instructions

1. Sear the Lamb Shanks

  • Pat shanks dry, season with salt and pepper.

  • Heat olive oil in a large Dutch oven over medium-high heat.

  • Sear lamb shanks on all sides until browned (about 8–10 min). Remove and set aside.

2. Sauté the Veggies

  • In the same pot, add onion, carrot, celery. Cook 5–7 minutes until soft.

  • Stir in garlic and tomato paste; cook for another minute.

3. Deglaze & Braise

  • Pour in wine to deglaze, scraping up brown bits. Simmer 5 minutes.

  • Add stock, herbs, and the lamb shanks. Liquid should almost cover the shanks.

  • Bring to a simmer, then cover and cook:

    • In oven: 325°F (160°C) for 2.5–3 hours.

    • On stovetop: Simmer gently, covered, for same time until meat is tender and falls off the bone.

4. Make the Mashed Potatoes

  • Peel and cube potatoes. Boil in salted water until tender (15–20 min).

  • Drain and mash while hot.

  • Mix in warm milk, cream, and butter until smooth and creamy.

  • Season with salt and pepper (and optional additions like garlic or cheese).

5. Reduce Sauce (optional)

  • Remove lamb shanks and strain the braising liquid.

  • Simmer strained liquid to thicken (10–15 min) or whisk in a bit of butter for richness.

6. Serve

  • Spoon mashed potatoes onto plate.

  • Place lamb shank on top.

  • Drizzle with reduced braising sauce.

  • Garnish with fresh herbs (parsley or thyme) if desired.


🍷 Serving Suggestion

Serve with a bold red wine like Syrah or Cabernet Sauvignon, and a side of sautéed greens or roasted root vegetables.
