Char Siu Chicken Recipe
Ingredients:

4 boneless, skinless chicken thighs (or breasts if preferred)

2 tbsp hoisin sauce

2 tbsp soy sauce

2 tbsp honey or maltose syrup

1 tbsp Chinese Shaoxing wine (or dry sherry)

1 tbsp oyster sauce

1 tbsp brown sugar
-
1 tsp five-spice powder
-
2 cloves garlic, minced
-
1 tsp grated fresh ginger

1/2 tsp red food coloring (optional, for that classic red hue)

1 tbsp vegetable oil
Instructions:

Make the marinade:
In a bowl, mix together hoisin sauce, soy sauce, honey, Shaoxing wine, oyster sauce, brown sugar, five-spice powder, garlic, ginger, and red food coloring (if using). -
Marinate the chicken:
Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor. -
Preheat the oven:
Heat your oven to 425°F (220°C). Line a baking tray with foil and place a wire rack on top. -
Cook the chicken:
Place the chicken thighs on the wire rack and brush them with some oil. Roast for about 25-30 minutes, turning and basting with leftover marinade every 8-10 minutes, until the chicken is cooked through and nicely caramelized. -
Optional broil for char:
For a slightly charred finish, broil the chicken for 2-3 minutes at the end, keeping a close eye so it doesn’t burn. -
