Ingredients:

  • 1 lb (450g) ground beef

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes (optional)

  • 1 cup frozen mixed vegetables (peas, carrots, corn)

  • 2 cups cooked pasta (elbows, penne, or any kind you like)

  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)

  • 1/2 cup sour cream or cream cheese (optional, for creaminess)

  • 1/2 cup beef broth or water

  • 1 tsp Worcestershire sauce (optional)

  • Salt and pepper to taste

  • 1 tsp Italian seasoning or dried oregano/basil

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess fat.

  3. Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.

  4. Stir in diced tomatoes (if using), frozen mixed vegetables, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Let it simmer for 5 minutes to combine flavors.

  5. Remove from heat and stir in cooked pasta and sour cream (if using).

  6. Transfer the mixture to a greased casserole dish.

  7. Sprinkle shredded cheese evenly on top.

  8. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

  9. Let it cool for a few minutes before serving.

Optional:
Add breadcrumbs on top before baking for a crunchy crust, or mix in some chopped mushrooms or bell peppers with the vegetables.
