Here’s a delicious and easy Keto Avocado Chicken Salad recipe for you:


Keto Avocado Chicken Salad

Ingredients:

  • 2 cups cooked chicken breast, shredded or diced

  • 1 large ripe avocado, diced

  • 2 tablespoons mayonnaise (preferably avocado oil mayo)

  • 1 tablespoon fresh lime juice

  • 1 celery stalk, finely chopped

  • 1 small green onion, chopped

  • 1 tablespoon fresh cilantro, chopped (optional)

  • Salt and pepper, to taste

  • Optional: pinch of garlic powder or smoked paprika for extra flavor

Instructions:

  1. In a medium bowl, combine the shredded chicken, diced avocado, chopped celery, and green onion.

  2. In a small bowl, mix mayonnaise and lime juice until smooth.

  3. Add the mayo-lime dressing to the chicken mixture and gently fold together, being careful not to mash the avocado too much.

  4. Season with salt, pepper, and optional spices to taste.

  5. Sprinkle chopped cilantro on top if using.

  6. Serve immediately or chill in the fridge for 30 minutes to let flavors meld.


Serving Suggestions:

  • Serve on a bed of greens or in lettuce wraps for a light keto meal.

  • Pair with keto-friendly crackers or enjoy on its own.
