Spinach Chicken Casserole with Cream Cheese

That sounds delicious! Here’s a simple recipe for a Spinach Chicken Casserole with Cream Cheese:

Ingredients:

  • 2 cups cooked chicken (shredded or diced)

  • 1 package (8 oz) cream cheese, softened

  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom soup)

  • 1/2 cup sour cream

  • 1 cup shredded mozzarella cheese

  • 1 cup shredded cheddar cheese

  • 1 package (10 oz) frozen spinach (thawed and drained, or fresh spinach sautéed)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

  • 1 cup breadcrumbs (optional, for topping)

  • 1 tablespoon olive oil or butter (for greasing the casserole dish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).

  2. Prepare the Chicken: If you haven’t already, cook the chicken and shred or dice it. This can be done in advance.

  3. Cook the Spinach: If using frozen spinach, thaw and drain it well, squeezing out any excess moisture. If using fresh spinach, sauté it in a pan until wilted and drain any extra liquid.

  4. Prepare the Casserole Mixture:

    • In a large mixing bowl, combine the cream cheese, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until smooth.

    • Add in the cooked chicken, spinach, and half of the shredded mozzarella and cheddar cheeses. Mix well.

  5. Assemble the Casserole:

    • Grease a 9×13-inch casserole dish with olive oil or butter.

    • Pour the chicken and spinach mixture into the casserole dish, spreading it out evenly.

  6. Top with Cheese: Sprinkle the remaining mozzarella and cheddar cheese on top of the casserole. For added crunch, sprinkle breadcrumbs on top as well.

  7. Bake: Place the casserole in the oven and bake for 25-30 minutes, or until the top is golden and bubbly.

  8. Serve: Let it cool for a few minutes before serving. Enjoy your creamy, cheesy spinach chicken casserole!

You can serve this casserole with a side salad, rice, or mashed potatoes to round out the meal. Enjoy!
