That sounds delicious! A No-Bake Cheesecake Rice Krispies treat combines the classic, crispy texture of Rice Krispies with the creamy, rich flavor of cheesecake. Here’s a simple recipe to make them:

No-Bake Cheesecake Rice Krispies Treats

Ingredients:

  • 6 cups Rice Krispies cereal

  • 4 cups mini marshmallows

  • 1/4 cup unsalted butter

  • 8 oz cream cheese (softened)

  • 1/4 cup powdered sugar

  • 1 tsp vanilla extract

  • 1/4 cup sour cream (optional, for extra tang)

  • 1/2 cup heavy cream (or milk, for a lighter option)

Instructions:

  1. Prepare the cheesecake filling:

    • In a medium bowl, beat together the cream cheese, powdered sugar, vanilla extract, and sour cream (if using) until smooth and creamy.

    • In a separate bowl, whip the heavy cream until stiff peaks form (you can also use store-bought whipped topping if you’re short on time).

    • Gently fold the whipped cream into the cream cheese mixture until fully combined. Set aside.

  2. Make the Rice Krispies base:

    • In a large saucepan, melt the butter over medium heat.

    • Once melted, add the mini marshmallows and stir until completely melted and smooth.

    • Remove from heat and quickly fold in the Rice Krispies cereal. Stir until the cereal is evenly coated with the marshmallow mixture.

  3. Assemble the layers:

    • Lightly grease or butter a 9×9-inch pan (or a similar size) to prevent sticking.

    • Press half of the Rice Krispies mixture into the bottom of the prepared pan. Use a spatula to press it down evenly.

    • Spread the cheesecake filling over the Rice Krispies layer, smoothing it out with a spatula.

  4. Top the treats:

    • Gently press the remaining Rice Krispies mixture on top of the cheesecake layer, making sure it is even.

  5. Chill and set:

    • Refrigerate the bars for at least 2-3 hours (or overnight) to allow the cheesecake layer to firm up.

  6. Serve:

    • Once set, cut into squares and enjoy! You can top them with fresh fruit, a drizzle of chocolate, or even graham cracker crumbs to mimic the cheesecake crust if you like.
