Here’s a quick and easy Korean Cheese Corn recipe — creamy, cheesy, and perfect as a snack or side dish!

🧀 Quick & Easy Korean Cheese Corn

Servings: 2–4
Prep Time: 5 mins
Cook Time: 10 mins
Total Time: 15 mins

🛒 Ingredients:

  • 1 can (15 oz) sweet corn (drained)

  • 2 tbsp mayonnaise (Kewpie mayo preferred)

  • 1 tbsp sugar (adjust to taste)

  • 1/2 cup mozzarella cheese (shredded)

  • 1 tbsp butter (optional, for richer flavor)

  • Pinch of salt & pepper (to taste)

  • Chopped parsley or green onions (optional garnish)

🔥 Instructions:

  1. Preheat pan or oven:

    • Pan method: Medium heat on stovetop.

    • Oven method: Preheat oven to 400°F (200°C).

  2. Mix ingredients:

    • In a bowl, combine drained corn, mayo, sugar, butter (if using), salt, and pepper.

  3. Cook:

    • Stovetop: Add mixture to a skillet over medium heat. Stir for 3–5 minutes until heated through.

    • Optional: Let it sit without stirring for 1–2 minutes to get a little caramelization at the bottom.

  4. Add cheese:

    • Sprinkle mozzarella evenly on top.

    • Cover the pan with a lid or broil briefly in the oven until cheese is melted and bubbly (2–3 minutes).

  5. Serve:

    • Garnish with chopped parsley or green onions.

    • Serve hot as a side dish or snack!

💡 Tips:

  • Use frozen corn or fresh corn off the cob if preferred — just cook it a bit longer.

  • Spice it up with a pinch of gochugaru (Korean chili flakes) or hot sauce.

  • Add a dash of soy sauce for extra umami.
