Steak, Avocado, and Roasted Corn Bowl with Cilantro Cream Sauce

Ingredients:

For the Steak:

  • 1 lb (450g) flank steak or skirt steak (or your preferred cut)

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp ground cumin

  • 1/2 tsp paprika

For the Roasted Corn:

  • 2 cups fresh or frozen corn kernels (about 2 ears of corn if using fresh)

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 1/2 tsp smoked paprika (optional)

For the Cilantro Cream Sauce:

  • 1/2 cup sour cream

  • 1/4 cup mayonnaise

  • 1/4 cup fresh cilantro, chopped

  • 1 tbsp lime juice

  • 1 small garlic clove, minced

  • Salt and pepper, to taste

For the Bowl:

  • 2 ripe avocados, diced

  • 1 cup cooked rice (brown, white, or cauliflower rice)

  • 1/2 cup cherry tomatoes, halved (optional)

  • 1/4 red onion, thinly sliced (optional)

  • Fresh cilantro for garnish

  • Lime wedges for serving

Instructions:

1. Prepare the Steak:

  • Preheat your grill or stovetop grill pan to medium-high heat.

  • Rub the steak with olive oil, then season generously with salt, pepper, chili powder, garlic powder, cumin, and paprika.

  • Grill the steak for 4–6 minutes per side, or until it reaches your desired level of doneness (for medium-rare, aim for an internal temperature of 130°F).

  • Once cooked, remove from the heat and let the steak rest for 5 minutes before slicing it thinly against the grain.

2. Roast the Corn:

  • If using fresh corn, remove the husks and silk, and cut the kernels off the cob.

  • In a skillet, heat the olive oil over medium-high heat.

  • Add the corn kernels and cook for about 5-7 minutes, stirring occasionally, until they start to brown and char slightly.

  • Season with salt, pepper, and smoked paprika, if using. Remove from heat and set aside.

3. Make the Cilantro Cream Sauce:

  • In a small bowl, combine the sour cream, mayonnaise, chopped cilantro, lime juice, and minced garlic. Stir well until smooth and creamy.

  • Season with salt and pepper to taste.

4. Assemble the Bowl:

  • In each bowl, start by adding a scoop of rice (or your preferred base).

  • Top with the sliced steak, roasted corn, diced avocado, and any optional extras like cherry tomatoes and red onion.

  • Drizzle with the cilantro cream sauce and garnish with fresh cilantro leaves.

  • Serve with lime wedges on the side for an extra burst of flavor.

Tips:

  • Grill the corn if you want an even smokier flavor! You can char the corn directly on the grill and cut it off afterward.

  • For a spicy kick, you can add some jalapeño slices or a drizzle of hot sauce to the bowl.

  • You can swap out the steak for chicken or tofu if you’re looking for a different protein source.
