🥗 Zesty Tomato & Onion Breakfast Salad

✅ Ingredients:

Salad Base:

  • 2 large ripe tomatoes, diced (or cherry tomatoes, halved)

  • 1 small red onion, thinly sliced

  • 1 cucumber, diced (optional for added crunch)

  • 1 avocado, sliced or diced (optional for creaminess)

  • A handful of fresh herbs (parsley, cilantro, or basil)

  • 1–2 boiled eggs or a poached egg per serving (optional for protein)

Zesty Dressing:

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon fresh lemon juice or apple cider vinegar

  • ½ teaspoon Dijon mustard

  • ¼ teaspoon chili flakes or 1 fresh chili (optional, for spice)

  • Salt and pepper to taste

  • ½ teaspoon honey or maple syrup (to balance acidity)


👨‍🍳 Instructions:

Step 1: Prepare Vegetables

  1. Dice the tomatoes and cucumber. Thinly slice the onion (soaking it in cold water for 5 minutes can reduce sharpness).

  2. Chop herbs finely.

  3. If using avocado, dice or slice just before serving to avoid browning.

Step 2: Make the Dressing

  1. In a small bowl or jar, whisk together the olive oil, lemon juice (or vinegar), mustard, honey, chili flakes, salt, and pepper.

  2. Taste and adjust acidity or sweetness as desired.

Step 3: Assemble the Salad

  1. In a large bowl, combine tomatoes, onions, cucumber (if using), and herbs.

  2. Pour over the dressing and toss gently to combine.

Step 4: Top and Serve

  1. Serve the salad on plates or in bowls.

  2. Top with sliced boiled or poached eggs for protein (optional).

  3. Add avocado on top for extra richness (optional).

  4. Sprinkle with a bit of sea salt and extra chili flakes if you like more zest.
