4 large russet potatoes

Instructions:
1. Bake the Potatoes:

Preheat your oven to 400°F (200°C).

Wash and scrub the potatoes thoroughly, then prick them a few times with a fork.

Rub each potato with a little olive oil and sprinkle with a pinch of salt.

Bake the potatoes directly on the oven rack for about 45-60 minutes, or until they are tender when pierced with a fork.
2. Prepare the Beef Filling:

While the potatoes are baking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the diced onion and garlic, and sauté for about 2-3 minutes until softened.

Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.

Drain any excess fat from the beef, then season with salt, pepper, and paprika. Stir to combine.

Remove the skillet from heat and set it aside.
3. Make the Potato Filling:

Once the potatoes are baked and cool enough to handle, cut a slit lengthwise down the center of each potato. Gently scoop out the flesh, leaving a small border around the skin so the potato holds its shape.

Place the scooped-out potato flesh in a bowl. Mash it with a fork or potato masher until smooth.

Stir in sour cream, milk, and a little more salt and pepper to taste. If you want extra creaminess, you can add a bit more sour cream or a tablespoon of butter.
4. Assemble the Stuffed Potatoes:

Stir the cooked ground beef mixture into the mashed potato mixture.

Spoon the beef and potato mixture back into the potato skins, packing it in gently.

Top each stuffed potato with shredded cheddar cheese (and optional bacon bits, if using).

Return the stuffed potatoes to the oven for about 10-15 minutes, or until the cheese is melted and bubbly.
5. Garnish and Serve:

Once the potatoes are out of the oven, sprinkle with chopped green onions, parsley, or any other garnish you like.
