🛒 Ingredients (for 2 sandwiches):

For Garlic Butter:

  • 4 tbsp unsalted butter, softened

  • 2 cloves garlic, minced

  • 1 tbsp chopped fresh parsley (or 1 tsp dried)

  • ¼ tsp salt

  • Optional: ¼ tsp crushed red pepper flakes (for heat)

For Shrimp:

  • 6–8 large shrimp (peeled, deveined)

  • 1 tbsp olive oil or butter

  • Salt & pepper to taste

  • ¼ tsp paprika or Old Bay seasoning

  • Optional: Squeeze of lemon juice

For Sandwich:

  • 4 slices of thick-cut bread (sourdough, Italian, or Texas toast work best)

  • 1 cup shredded mozzarella or provolone

  • ½ cup shredded cheddar (or Monterey Jack for extra melt)

  • Extra butter for the pan


🍳 Instructions:

1. Prepare the Garlic Butter:

Mix softened butter with garlic, parsley, salt, and optional red pepper flakes. Set aside.

2. Cook the Shrimp:

  • Heat olive oil in a skillet over medium-high heat.

  • Season shrimp with salt, pepper, and paprika.

  • Sauté shrimp for 1–2 minutes per side until pink and opaque. Remove and roughly chop into bite-sized pieces.

3. Assemble the Sandwiches:

  • Spread garlic butter generously on one side of each slice of bread.

  • On the unbuttered side of two slices, layer cheese, shrimp, more cheese (so shrimp is sandwiched between cheese layers), and top with the other bread slice (buttered side out).

4. Grill the Sandwiches:

  • Heat a nonstick skillet or griddle over medium-low heat.

  • Cook sandwiches for 3–4 minutes per side until golden brown and cheese is melted. Press down slightly with a spatula.

5. Serve:

  • Let rest for 1–2 minutes before slicing. Serve with marinara, aioli, or a simple salad.
